So I was derping as usual when I decide to dig out an entire z level underground I have about a quarter mined when the thought came to me... What do I possibly do with a huge empty space underground? Any ideas?

Dig interesting canals and then flood the whole thing, turn it into an underground tree garden complete with decorative water features.

Storage, or do a personal favorite of mine - flood it, breach the caverns and release beasties from the surface and the caverns into a Dwarven nature reserve. Have viewpoints for your Dwarves to observe Jurassic park. Also a bridge+ditch to access the reserves from time to time in order to hunt is pretty much mandatory.

And they have to be wild animals.
