Wild animal permanency

Hello everyone, a newbie here. Searched the wiki and the forums here, but did not find what I was looking for. I am looking into taming animals for my fort now and was wondering, do wild animals also appear in random intervals such as other creatures, or are they permanent on the map?

By that I mean, will there be a persistent pack of, lets say, elephants on the map and if I didn't get them from the start of an embark, tough luck? Or do they appear and disappear even later, given the biome and temperature demands are met? I would realy love to have a badass lion guard for my huge marble, gem encrusted fortress with lavaducts to scorch everything. Is my only option getting lucky with the elven caravan?

Wild animals appear on the edge of the map, wander around for a bit, and then leave by the edge of the map.  Once they leave, another group of animals appears.  Animals which appear on the edge are drawn from an invisible off-screen population which is generated when you embark, drawn at random from the list of possible animals which can occur at your embark site.

when an group of wandering animals on your map is killed or leaves voluntarily, another group will spawn.  That new group could be anything that exists in your biome.  You can check by doing an export-local-image thing.  There's an option/method there to get a population of every species in each biome.

In prior versions you could cause all animals to go extinct after murdering enough of them. I haven't checked in 34.XX, but its easy enough to test.

Embark on a small, 2x2 area, then use SPEED:0 and have all of your dwarves be hunters. As soon as one group of animals is all dead, another one will instantly appear at the edge of the map. This will keep on happening until they're all dead, at which point no more wild animals will appear.

Animals still go extinct in 34.xx.  And capturing them in cages counts as "killing" them.

Once you've killed off all animals no more spawn.  Except maybe once a year.  I've had animals appear once in a while after they stopped coming, but not often.

Though they can still go extinct, they are now limitless because they "reproduce" off-screen. So it's still possible to have one or two dwarves hunting without exausting the population, but three or more is overkill.
