I've generated 3 medium to large maps today, and according to my find results none of them have any flux stone on them. Is there something wrong with the game or the search or do I just have bad luck? I'm not completely new but I still have a lot to learn, but isn't flux stone the kind of stones used in metal?

Finder is broken. Flux is only used in steel production.

Don't select "Everywhere" for mineral occurrence when generating a world.  Select "Frequent" instead.  Flux stone will show up then.

This, I was having the same problem and finally figured it out.  Now finding a site with both flux and iron, that's a different problem.

Finder is unreliable for Flux, both in reporting its absence and presence. While it isn't a self-contained solution, you can use DFHack to prospect your embark and find out exactly what you have.
