I agree with bukitodinos, do SCP-1000. Sounds really easy and give it some personality traits. Extra points if you add some of the organic technology/weapons from SCP-1000.

I've been reading that SCP Foundation site lately, and came across the SCP-231 article.  Their reasoning is the opposite conclusion I came to.  Ever since Buffy the Vampire Slayer,  I've been of the opinion that if the world is so fragily balanced as to require us to do unspeakable acts to one another, then the apocalypse is actually the lesser evil.  After all where do you draw the line?  It may be a few people in this fiction, but some writers have world's where the big bad has warped the physical laws so that all people have to do horrible acts.  Six of the previous mothers already gave birth, and number 7 will eventually anyways.  If the situation were real, I'd say leave her alone and let us fight whatever comes some other way.

Apparently it gets even worse with SCP-974, they feed children to a monster they can kill in it's most aggressive form,  and contain with simple flamethrowers in it's normal form.  And it only transforms if they let it bury itself and stew for a month in a hibernating state.

You can do squirrels too, one of the SCP numbers are squirrels, just give them some bonuses, because I think the enjoy mauling in large numbers...

Also, great job with the mod, the site gave me nightmares for about a month, and now I get the FUN from having them in DF.

If, in addition to stat bonuses, you give them the [LARGE_PREDATOR] and [LIKES_FIGHTING] tags, and increase the [CLUSTER_NUMBER] to preposterous amounts, they will travel in packs and slowly gnaw you to death in adventure mode, like swarms of tiny, chittering wolves.  I made a creature like that before.  It was unbelievably lethal.

Let's not forget that strange green slime all the SCP people don't want making contact with any dead bodies for some mysterious reason (still unanswered as to why).

EDIT:
SCP-1048 would work better in SCP:CB. Holy crap.

1048 wouldn't really work with the game's mechanics:

I would make SCP-447 if I could. The problem is the dead bodies and the inability to make instant win conditions.

Adding SCP-009 (water with inverted phase changes) as a new material doesn't seem too hard.
 I made this based the water raws on the wiki, but I don't know if it would work.

It also needs to convert normal water into itself and have a syndrome/interaction that kills people who touch it as it crystallizes their blood

Unless I'm mistaken, that 009 would be solid under 10000 Urists and gaseous above that. Also, it's impossible to mess with liquids in any way. Unless you count adding a new material that happens to melt at room temperature.

I made ice spiders, though I haven't tested them.  Basically the opposite of fire snakes, though, so I don't see why it shouldn't work...

It would do an interaction that doesn't raise the corpse(or maybe it does, I didn't check), it needn't get any more detailed than that.
