Dog breeding.

So, I've always been a fan of bringing along a couple dozen dogs along for defense and emergency food. Thing is, I've never embarked in any sort of breeding program before, and I'm interested in making this fortress I have now last generations instead of twenty-odd years, and to have really good dogs.

Also, peacocks and chickens, but mostly, I want to breed dogs.

What personality traits should I attempt to breed in? (Check them in Runesmith - they actually DO have personalities, the last time I checked)

What about physical traits?

What if I am lacking some of those traits all together - like, say I want big, fat muscle dogs, but don't have any? Should I slaughter all the boy dogs and puppies who aren't extremely muscular?

Have your prime fighting squad run into battle with dogs, the stronger ones will survive thus natural selection.

Yes. Eugenics works with dogs in DF.

Kinesthetic sense is the only good mental trait you need for them too.

Yes. Eugenics works with dogs in DF.

Duly noted. Why only that? I'd think that willpower and spatial sense would be important, too?

How about at the most? I'd think agility would be important, but what order? Also: how much fat?

Fat is only important if you want to cook them for tallow as a general rule, but fat is also tied to endurance, so it's an OK stat to have.

If you can see strength and agility, those are the two most important stats, besides size.  You shouldn't really need to settle - go for all of them!  However, size should probably be the most important, followed by strength, then agility.  The big thing is just getting a bite powerful enough to take down a foe, not that they are fast in doing it.  A million attacks that don't pierce armor are pointless.

Toughness, Endurance, Willpower, Spatial Sense, and Kinesthetic Sense are also minorly tied to the basic combat skills, from dodger to biter.  Upping these might help a little.

1. Fat = Body armour for dogs.
2. Toughness, Endurance and Willpower increase the survivability of dogs.
3. Kinesthetic sense is MAJORLY tied with EVERY SINGLE COMBAT SKILL. So is spatial I guess.

i am fairly sure the raws specify a max size.

fat, for any animal, needs to be cut before internal organs can be reached. A large layer of fat protects animal against a part of the damage it could take. Same for dwarfs btw.

Dogs can only be 10% larger in every dimension, apparently.  That roughly translates to a theoretical maximum of 33.1% larger size in total, and that, in turn, translates into a size of just under 40,000 as opposed to the normal 30,000.

This multiplies the mass of every part of an animal, and in turn, multiplies the damage calculations, so a 33% larger dog is going to have a 33% larger mouth that exerts 33% more force in a bite.

You can effectively nerf a GCS by making them 2x larger, their fangs become too large to penetrate armor easily.

So what if you bred small, armor piercing grizzly bears? Would those be useful?
