Because ass in reference to a person's ass is more commonly used in most peoples' everyday conversations. If everybody owned a pet donkey the association would be different.
Nonetheless, I cannot help but imagine a human ass spewing fire. ;-;

Considering DF uses the word "donkey" for every instance of a donkey-creature except procedurally generated forgotten beasts/clowns, it seems that the use of the word "ass" is very deliberate and intended to get a reaction out of the player.  Probably to make it sound more crass and horrific.

Even when it's not accurate to call them donkey, like when they're wild!  I got tired of seeing "wild donkeys" and replaced every occurance of donkey with ass in the raws, but then got a little tired of seeing "ass milk and cheese"

Also now that there is a sterile tag, why are mules not folded into asses and hinnies added to horses?  I have been changing that by hand even before there was a sterile tag, I just left out "male" and "female" in the tags.

Personally, before the caste system went in, I just assumed it was going to have a reaction-like "recipe" system, with a template that was basically LOCAL_CREATURE:MALE -> 50% LOCAL_CREATURE:FEMALE / 50% LOCAL_CREATURE:MALE. That would allow for extra breeding recipes to produce hybrids, sterile or fertile or… other. Might be a decent improvement over what we've got now :J
