By detail, do you mean Engrave?  You can only Engrave a natural stone wall which has already been smoothed.  Engraved walls are worth more than smoothed ones.

any way to change the color of the wall after you smoth and engrave it, cause im sort of OCD about it but want it to be very nice

Short of changing entire tilesets and graphics mods, the answer is no.  More smoothing and engraving, directly influences the number of migrants.

You also cannot engrave a built wall, so plan your fortress carefully.

yea.. all nobles and things that need to be happy downstair, everyone else up stair.
