Add a new option to the digging menu - dig vein.
Squares marked "dig vein" function as normal dig orders; but when new squares are discovered after digging, those squares that have a matching material are also automatically marked with the same "dig vein" order.

And this is done before the miner chooses which square to dig next - so most likely he'll continue digging there;  not as with manual marking where usually he's already moving elsewhere and a new guy is coming to dig what I just marked.

Maybe it's better to follow the trace on the floor, so you can restart vein digging after the designation has been removed for some reason. No single or half vein will be left out that way.

I think it could work, so long as it's not for things like stone. Also, I can foresee that it might have a lot of bugs and issue with dwarves either immediately wallhacking their way to other veins that the game considers "connected", not working on clusters not marked properly as veins, or causing other, similar weirdness.

This is already voted #7 most popular suggestion on the Eternal Suggestion Voting, and it is already on the devpages to be put into the game (Search for "Vein Auto-Mining".) 

So, it's already going into the game, and as Kogut said, you can get it early by using DF Hack.
