What DOES a plump helmet taste like?

It would also be somewhat sweet as it must have enough sugar to ferment one into wine.

Or that the fermentation process is able to convert cellulose.

(Most fungus lacks simple saccharides, because they are not photosynthetic. Some species of fungus are able to break down cellulose into simple sugars though. It is possible that the plump helmet is such a variety, and contains the enzymes in sufficient quantity that bottling ground up mushroom pulp and keeping a target temp causes enzymic breakdown, using the enzymes already in the mushroom. The resulting ooze is then fermented normally.)

Regardless, I would expect a plump helmet to taste like most other mushrooms. Earthy, and a little chewy. Given dwarven propensity for meat, perhaps its like a portabella.

No, I refuse to believe it.  My dwarfs are not hippie vegan elves who eat portabella tallow roasts because they're a healther alternative to meat.

No, they eat vegan shroom roasts because you're too lazy to breed livestock.

Either way, I take them to be a sickly-sweet foodstuffs.  Like... a doughnut that's got way too much sugar in the dough.  It just tastes oversweet, like you should eat it with a large glass of water to wash out the taste of artificial sugar.  About the consistency of pastry as well, thick and chewy with the tendency to "crumble" in your mouth.  More "carrot cake cupcake" in texture, or british scone.

Altogether not a pleasant food, but it's plentiful and cheap and you can live off it, right?  That's the whole point of plump helmets.  If you're going for tasty, you're probably getting flour and syrup and booze roasts.

You're thinking about it the wrong way.
It's not the healthier alternative to meat, it's the meatier alternative to plants.
(Also elves are cannibals, not vegans. So eating meat is more elven than eating plants ;3)

I remember an old dive into the language file back in 40d, which had "sucked one too many plump helmets" as a string in it.

I suspect that they have a firm outside, and a juicy/custardlike interior, similar to some of the round "ball" mushrooms that my sister's mother-in-law cooks with. (She is lao)

Next time I visit, I will raid the cabinet to see if I can find them. She gets them canned. (They are black with a yellow interior after canning, and about the size of a half dollar. They are "chewy", but quite flavorful.)

I imagine them to be the size of one of those big market cheese wheels and be firm and chewy like other mushrooms but a little harder. Maybe a bit more fibrous around the stem and in those fins underneath that have the spores in them. As for taste, starchy? Maybe like dark sourdough bread without the bubbles?

The answer is simple, a plump helmet tastes like... plump helmet. *Gasp*
Though to elves, it tastes like Dwarf. (Fracking Cannibals...)
To humans, most likely like chicken.
To me? Iunno, probably like some sort of odd fruit, because that act like one normally. (only way to get the seeds is to eat it or remove them before cooking... not very 'mushrrom' like to me...) Though, it'd also probably have a decent protein content somwhere, also making probably very bean-like as well... like, a Beany Skin with a fruity insides... aand, a 'fiber' rich stem? *shrug*
