How do I do this?

Ok, so I wanna make a gatehouse to keep out goblins etc.

So this is what I want:

Where W=Wall G=Bridge .=Floor and _=channel.

Ok, so I want to let the traders wait in the middle before traveling over and the right bridge will be closed normally and the left left open, how do I let this happen while having the traders send caravans and not just mules and traders.

How can I do this?

Build the Trade Depot in the middle? If they can't access the Depot in the first place, then they'll just leave, regardless of whether there's one on the map, I believe.
