How does bone armor behave in combat and how good is it?

It won't beat the protective value of anything metal or better. Still looks good and would make awesome for ceremonial purposes :P

What is the most important object to every dwarf ever? What is worth risking ones live to save from the dangers of the outside world? A sock.
And what piece of armor protects the sock? The boot of course!
Simple logic.
And since the best sock is always the left one, every artifact shoe is also left.

Edit: Bone armor is weak... but it looks cool :]

Bendy little fish bones. Lots of them. Yak bones? Shave them into bendy little yak bone bits.

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

I've sort of wondered if it's easier to dodge in lighter armor.

As far as I can tell, though, high quality bone and leather armor gets shredded by goblin bows and arrows.  :(  I like to embark somewhere with obsidian for rock short swords and just watch a military of twenty sworddwarfs with primitive bone, leather, and rock equipment take about 15 casualties repelling a single goblin ambush.  It's nice how they somehow get their hands chopped off when throwing them in a danger pit against a goblin thief.  I like to let them keep their daggers so my military dwarves get plenty of scars.

It's been my experience that gold armor is best suited for ceremonial positions (think Royal Guard Captain).  I had a an artifact gold boot once, goblin chopped through it with a copper sword and the severed part sailed off in an arc immediately.  He may have just gotten lucky (or my dwarf was unlucky), as it wasnt prolonged testing :p

You know how gold is. It's bendy, it's heavy. So it's not very effective in combat.

Moody dwarfs seem to have a preference for making boots. Maybe because they're leg-end-ary. :P

Got me a nickel low boot. I wonder if that's at all a useful item? Probably not, but the artifact bonus should a bit, right?
