Aw, don't give up so easily ;)  This is Dwarf Fortress; here we dig in, we don't give in!

If your goal is to provide practice for your military then don't even bother with the cages.  Either use the door trap previously mentioned to trap them directly in the "arena" area, or build your arena area directly below the trapped corridor and have the floor of the corridor be a retracting bridge.  The thief will fall one z-level into the barracks and be pounced on by your stalwart defenders.

If you just want to train Marksdwarfs, then station them as your spotters and put them in leather so that they are faster.  They will light up the little thief as he flees.

Well, a 1z fall shouldn't hurt them very much, especially Kobolds which are small.   Animals are a dime a dozen and easily replaceable if something bad happens to them, but if you are worried about it you can pasture them in an alcove to the side.   They just have to be within 1 square of the path the thief will take.  So something like this-

What's the best way to capture a goblin/kobold thief alive?

Goblins can be caged just like any other non-trap-avoiding creature, so there are no special considerations there.

For kobolds, see the other responses.

Goblin grinders catch a trapavoiders, without a spotter.  FYI.  The flapping hatches as the little bugger tries to hack the hatches, are like a blinking No Vacancy light.

After my first runin with a vampire in a large population fort, I decided to try something that just might be a no-brainer.

I've started buying every barrel of blood, ichor, venom, all the barreled fluids I can get my hands on.

I'm pretty sure that I have at least one Vamp in the fortress by now, with a population at around 120, but so far no assaults on anyone yet.

So...

Does it seem to anyone else that perhaps buying all the blood and ichor and whatnot from dwarven and human caravans might cut back on Vampire activity in the fortress?

Way I see it, Vampirism is supposed to be a curse, so maybe the infected are being driven to feed on dwarves because I wasn't giving them barreled blood to drink?

Maybe it also has something to do with personality?  A Vamp with good empathy, likes to help others, etc, might really fight the urge, and prefer to drink barreled blood.  A sociopathic one would just consider other dwarves as refreshing snacks.

Anyone else experimented with this?

Barreled blood is currently useless unless you have a mod that is doing something with it. Vamps won't drink it.

Pretty much that.  Either you don't have a vampire, you haven't discovered any victims yet, or he's in the military and been stationed, which prevents him from having a snack.

It's entirely possible to have 120 dwarves and no vampires.  When .34.01 was released vampires were everywhere, but Toady scaled it back and things are a lot more reasonable now.

I'll have to look for Bomrek Degelbetan again and see if their name is still missing from Dwarf Therapist.  They have been in the fort for three years or more, from back when I was manually inpecting every dwarf on entry.  I got a 5 adult dwarf immigrant wave, but only 4 adult dwarves showed up on DT.  Bomrek was the one that didn't show up.  Nothing in game gave me any idea anything might be wrong, so I let them in and started buying blood to see if that would have any effect.

I use traps to defend my forts, not military.  This time around I'll be turning the place into a community fort, so I've set up some military equipment, but have not yet begun to actually form a military.  I'll let the future folks handle that :)

Time to go grab food first though, in RL  :)

Yo, how are you doing?

The waterfall on my map is giving me quite a headache. I'd like to get rid of it. Is there a reliable method?

While digging out my treefarm I was suprised to hit water. That's when i noticed the waterfall. In another game, with the same amount of dwarfs(~120 capped @100) and the same map size(5x5) I had about 20 fps more so(30 now, 50 then), although I changed my build, i think the drop in framerate is a result of the waterfall. The map now is about 10 (usable) z-levels higher than the other, which is the reason for the different build to lessen walking distance. 2 multilevel cavesystems, standing water, lavasea has about a dozen 6-high tiles floating around.
Even if the assumption about the waterfall being the reason for the fps decline is not entirely correct, I'd still want to get rid of it for any increase in fps possible. The dudes are about 80% ecstatic without having the ability to be near it, so it makes no difference to me.

Haul up some magma with some minecarts and dump it to form a dam across the top edge of the waterfall. The water should quickly fill up above it while it drains away below it. Note that you will get a fair bit worse FPS during the draining/filling process (due to the increased number of non-7/7 tiles) but afterwards it should speed up to faster then it was before.

Is there a way to destroy trash ? i've made a refuse stockpil outside of my fortress but it's full and i want to clear it.

It will rot away, but that can take pretty long. So behold everybody's favourite exploit:
