Your layouts seem a little cramped, I may just be a symmetry freak but I find structured simple layouts are easier and more fun to work with. You should experiment with building above ground, it forces you to think about your architecture and helps you build space efficient structures.

I'd recommend learning about starting up a militia. Your last fort probably ended before you could even start on my monument, and a good militia can be a godsend for defensive breaches.

Agreed on the 3-D suggestions. It can be a little difficult for people to think in three dimensions because we're used to more-or-less two dimensions. Just remember that three z-levels down is a lot closer than twenty tiles to the north, for example.

Have you got access to Stonesense, or a similar utility? It really helps you see the 3-D, before you get used to seeing it in your head, yourself. Which, by the way, is a surprisingly easy thing to learn to do. After all, we did come from tree-climbing three-dimension-thinking ape-type creatures.

You ever gotten bored and looked up at the ceiling and pretended it was the floor, and pictured yourself walking around on it? It's the same kind of thing. Just learn to turn a 3-d structure around in your head, and you'll be good.

You should totally mod them to be able to eat elves. Due to elven culture, they find devouring the corpses of their kin to be far more respectable than letting them rot, or throwing them in magma.
