But yeah - I essentially picture it as a great big grinder: live goblin goes in, goblin sausages come out. This essentially makes goblinite part of a fully sustainable economy for your fortress ...

I'm not privy to the inner workings of sausage making, but don't they use the intestines as the casing?  I'm not sure I would eat goblin meat encased in "reeking guts."  Apart from that though, I'm in full support.

No, you don't need a reaction to make this happen. You just edit the food raws so sausages are a possible name for cooked dishes and then edit the civ raws so goblin butchery becomes ethically acceptable. Personally I grew tired of having my dwarves eat goblin pizzas and goblin cake but I still build 'industrial organics processing plants' for the bones.

Ahhh, you wanted a building material not an edible food. I'm pretty sure a "make spam" reaction was successfully made, though you had to put in butchered meat not live prisoners.
