Hi,

is it possible to make it so that ores can not be converted to blocks, but still can be smelted?

Yes. Go into your z-menu, scroll over to Stones, then find the ores that you want to smelt but don't want turned to blocks and hit ENTER until they are red. This will allow them to be used for special purposes, like smelting, but not for general purposes, like crafts or masonry.

Just note that all ores should be disabled (showing as red in Stone list) default. So, unless you have manually enabled them, none should be used in making blocks in default.
