On a somewhat unrelated note, you can also build stairs in such a way that they pass through solid floors. An up-stair constructed on a floor tile and an up/down stair constructed on the floor tile above it will allow passage between the two stair tiles.

I am trying to make chickens lay bees as eggs. So far it only produces a single "Tame Small Creature" when a hen lays bees.
Honestly at the time, I didn't see what could go wrong with crowding 80 military Dwarves into a small room with a necromancer for the purpose of making bacon.

I would naturally assume that the creation of an up/down stair on the level above would require for the floor to be removed as part of its construction so the downward staircase could be created.

I have another question which I think is relevant to this topic.

I have built this massive stair case that goes down in the ground, made of 3x3 layers. The upper layer correspond is connected to my fortress entry. They are made of down stairways (d-j), as I didn't plan to dig up at that time.

I have changed my mind and I would like to build a continuation of this central staircase in to the uppper level  :-[

Is it possible?

Yes, it is. Order your dwarves to build a Up/Down Staircase construction on top of your stairs. (b->C->x)
After that, you will gain access to upper level.

I've got a single up-down staircase going all the way from the top of my tower to the MagmaSea, with Hatches on a lot of the busy levels, i've not had any stairwell Fun yet...

Nope, you can go right ahead and build a staircase (any type) on solid ground and when you deconstruct it the ground will be just as you left it. It'll revert to the layer stone if it was previously something else, but that doesn't matter for access.
