Is there any way I can auto-dump tallow or have it not made when I butcher animals?
When I try to turn off auto-tallow it turns off pretty much every other food preparing option too.

One thing you can do is suspend the render fat job as soon as it starts in the workshop and that will prevent any tallow from being made automatticly at that workshop. I know theres a way to turn off just that but I forget what it is.

Why not just cook it ll to make it consumable, make it all into soap, or set your tallow stockpile to accept no barrels.

Go into the Orders->Workshop menu and turn off "Auto Kitchen". Do note, though, that it won't actually update the display - there's a bug which prevents it from showing up correctly.

Maybe I'll write a binary patch to fix that one on Windows...

Create multiple food stockpiles.  Make one or more in which you allow any food that requires a barrel for storage (booze, milk, syrup, lye).  Create others which permit food which doesn't need to be stored in barrels (including meat and tallow) and set maximum barrels to zero on those.  You will no longer have barrels wasted storing tallow or any other non-liquid food.
