I'm interested in hearing about that. I used to work at a chinese restaurant, and man, prepping the general tso's was a pain. Curious to see if the method you use is any different.

The basics of the plan (not full recipe, obviously)

1. Coat chicken in cornstarch batter and fry (I've already done this once with my cousin, he did the actual frying and got temporary freckles on his hands from all the grease burns, so I can't wait to do it on my own :P)

2. Make sauce (I was going to use home-grown jalapenos, but then I remembered they had to be dry, and we have no way to dry them  :'()

3. Pour sauce onto fried chicken pieces and simmer

I haven't actually done it yet.

Sounds about right. Are jalapenos normally used in the sauce? I remember I had to grind up whole bucketloads of dried pepper for work, but I'll be damned if I know what kind they were. I could see jalapenos being quite tasty, though.

Grease burns are fun*! They're the sign of a real cook.



*They aren't fun at all.

I know what grease burns are like, I've fried my fair share of stuff. Once without a shirt on. That was especially fun.

I don't think that it actually uses jalapenos, since the jalapeno is a Mexican pepper and General Tso's is an Asian dish, but we have a garden, and we grew a hell of a lot of jalapenos, so I figured I would use them. Until I realized I needed dry peppers, at least.

I made some pretty bangin' cheeseburgers and fries the other day.
The toughest part is getting the fries just right. You need the oil to be super-hot or else the fries will just get soggy. A gas stove probably won't be hot enough. After that, the trick is to get a paper bag and fill it with a spoon each of salt and Old Bay. Then you dump each batch of fries into the bag and shake it until they're sufficiently covered.

I also make awesome chicken corn chowder.

Ouch.


All I cooked today was box rice and a couple chicken thighs. Easy and lazy, but it still tastes all right.
