Stair question

To get between Z-levels, I dig up-down staircases. Recently, I found a cavern. Basically, if we're looking at a cross-section of the cavern:

In other words, there's empty space between my stairs and 7/7 of water. I need to be able to build something underneath the stairs to prevent creatures from flying up into my staircases. But I can't figure out how...

@Footjob, you can microwave most grains I've tried pretty easily through the microwave, even if they aren't packaged for it.

Knock out the stairs on either side, build walls, then break out the center stair and build a floor. Problem solved.

If you build up-stairs over the up-down stairs you've carved out, that should block creatures from entering from below.

I just build a floor hatch at the bottom of the stairs and lock it. I usually explore downward with a single square of stairs, so I have to dig one space out to the side for the worker to have room to install the hatch.
