I don't even.

First year of my current fort, sinister terrain so I embarked with a buy with some military skills and a copper shield/axe, my woodcutter got the extra axe.

First caravan hits and I decide to buy my warrior, who by this time has killed an alligator, 2 harpies, and an ogress with the help of his trusty untrained dogs, a bronze axe, I also picked up a shield to give to a new inductee once I have a good possibility.

This was not to be, I randomly inspected to see if Geshud had equipped his new axe and was surprised to find he had acquired a steel axe from somewhere, not only that but he apparently wanted to us it while at the same time using his old copper axe, as well as his old shield... and the new one I bought, he also decided he needed to strap both axes and a shield in his right hand, and only one shield in his left, this guy is going to be a blender once he gets in a fight.

Yeah, dwarves tend not to have realistic equipment limits. Have fun with your blender.

I have a few one-armed dwarves in my military that are carrying a shield and weapon. One of them even carries a crutch with him because he lost a leg too.

one of my militia captains lost a hand and now he can't pickup anything - even when he tries to store his own stuff, he cancels "Too Injured".

seems its better to lose an arm than a hand

Sorry to break your bubble bro, but even with 50 axes, he still has only 1 attack per turn.  I'm not sure if having more than 1 shield gives additional blocks...

Build a grid of floor grates above the entire city. Draft a squadron of masons and bomb the crap out of the city with falling constructed walls.

Someone did some tests in Arena by equiping a bunch of dwarves with a single shield and another group with double shields. Each dwarf would stand opposed to a goblin crossbowman who kept shooting until the dwarf was either dead or his quiver was empty. The dwarves with two shields had a much higher number of survivors.

Also, if a weapon gets stuck in the enemy, the second one can take over and the killing never stops :D

That is a good point, even if it doesn't happen often.  Your legendary + 5 Axedorf means almost nothing without his axe.

I'm not sure if having more than 1 shield gives additional blocks...

I'm pretty sure each shield equipped does a block check individually, so yeah, two shields will give you two 20% chances of blocking a shot.

I was aware of dwarve's tendency towards being weird about equipment, what primarily amused me was the fact that he uses two axes and one shield in one hand, you'd think he would even it out a bit.

He is doing well with blocking, so well in fact that his dodge skill is rusty now, he attacks with unrelenting ferocity, and seems to like to hit enemies with the flat of his steel axe while kicking them in the lung.
