Do they actually need to be fed now?

Depends on what they are. If they are not grazers, no. If they are grazers, yes, they need grass. Pasture them over an appropriately sized grassy area and they'll handle the eating themselves.

I bought a Gigantic Panda from some Elves. It starved to death despite having abundant food. Another one of those glitched beasties. :(

Pandas only eat bamboo.  Did you specifically have bamboo?

Create a zone by pressing the 'i' key, then drawing a rectangle like you do with any other designations. After you are done, hit enter and you'll be able to make that zone into a pen/pasture by pressing 'n'. Then you can press 'N'(notice that it's capital N) and choose which animals go into that zone.

yeah pasture em and if they start fighting each other, don't worry about it too much.

if the combat log pisses you off, just make smaller pastures and separate the troublemakers.
donkeys and horses tend to be assholes.

Keep in mind though, if you have an overcrowded pasture make sure it doesn't go all the way to the edge of a high cliff. I've had two animals die because they fought and fell into a deep canyon.

You can also make underground pastures once you have breached a cavern and the underground spores fly thoughout your fortress spawning moss and mushroom growth on soil floor tiles.

Grazing animals do afford much more micro management now - even if you have your starting animals pastured and those you bought from a caravan - there will be still those who will come with migrants and be born by your females. You have to look after them and assign them to pastures and watch out that the pastures are big enough and that they still have enough grass during the seasonal changes.
Notably Yaks need very big pastures.

OTOH carnivores need no attention at all as well as all kinds of birds. With birds you can get lots of eggs without to much work.
I tend to keep only a few grazers for milk and hair and an occasional slaughter.
