Best use for Exotic tame animals

The annual elven merchant visit has been very good in bringing interesting exotic animals to trade once I convinced them to stop carrying tons of cloth.  I've been getting access to jaguars (normal and giant), cougars, wolves, and such on a consistent basis. 

The last visit brought a few animals I don't have much experience with; an alligator and a giant desert scorpion.  I presume if the former is not good for defense than it can probably be made into boots or something.  The latter looks like a tame version of a dry climate killing machine.  Will this be as useful of a tunnel/area guard as I think it should be?

They can be dangerous, just don't expect them to kill anything with armor or weapons on. You could wait for a mate then breed an army of them.
