Grayed items in trading

Why do some items appear grayed out in the trading windows ?

I know that elves do not want things made out of wood, but last night I was trading with humans (I think) and they didn't want half the crafts (robes) I had to offer...

Does each trading party have an item type that they do not want ?

Colors in trading.

And for humans, whey accept everything. As long as it's more valuable that what you are trying to buy from them and their animals can carry it.
