Does the type of leather you use effect the protective properties of the armor or is a puppy leather armor the same as a dragon leather armor?

unfortunately, no. it is possible to do that by modding, but leather is all the same in vanilla

They can swim in magma without magma proof leather. They just won't survive the process.

Admittedly, they wouldn't survive the process with magma-proof leather, either, but at least their leather clothes would survive. No clothing, even full multilayered clothing and armor, gives full protection from getting submerged. Clothing is not magma-tight. There has been at least one attempt to custom-mod a magma-proof suit that failed, and I doubt it's even possible.
