About the captain, you might want to assign him a specific weapon so he will go back to using a hammer.

Yeah, I do a pretty regular weapon pass to make sure everyone's equipped with appropriate weapons-- that's how I noticed he was using a mace to begin with.

I do believe this fort is nearing its end, regardless.  At 217 dwarves and ~80fps, I think it's time for me to start eating the cotton candy.

Aren't maces better versus less armored foes? And unless you're playing a mod you won't encounter any heavily armored enemies afaik

Regardless of which weapon is better against what, I'm pretty sure I'd rather have a masterwork silver hammer made by a legendary weaponsmith than some random decorated copper mace.
