How can I tweak my worldgen settings to get way more tall mountains? (i.e. ▲, not ⌂) I hate when I embark on a cool looking site only to find its just a crappy 5 z-level hill.

Add more to the variable height and more max height.  I can't think of the exact numbers, but up the max altitude a bit, and change the "X-Height Variable" some.  These variables basically say "height will change every so-and-so squares but the exact number isn't know.  Lower variable means more gentle sloping changes, higher means faster changes.

Not as long as there's a grass/forest square in your embark rectangle

With enough variance (or manual painting) you can place an ocean beside the mountain, and have huge-massive 300Z differences from top to bottom of the surface.
