What is a good idea for a megaproject for someone new to megaprojects?

Build small inverse pyramid, say 5 z-levels high and 9x9 on the top z-level. Once you can figure out how to make corners into open air like that, you're more-or-less able to build anything.

Pyramids are classic, but they're usually not all that interesting (unless you go all dwarven and build them humongous and make it your new upper ground fort containing your entire population all while building it from the ground up, upside down with the entire structure supported by a single wall section)
Diverting a river and building a dam would be a nice start, fairly easy and you can learn about floodgates and how water pressure works

How about a grand throne room?  Must be at least 3 z-levels high (doesn't matter for the room) with 3x3 pillars, and all walls and pillars engraved.   Teaches you how to properly make and tear down scaffoldings(or how to get around that problem ;)), as well as digging out large sections (I suggest using ramps).  Add a waterfall for learning about plumbing.

Did my first proper one before the demise of my last fort - huge execution tower to the top of the map, hole dug beneath it so victims fell to the magma sea. Quite "Temple of Doom"y

Surface fort defending your entrance, with barracks for the troops, a paved courtyard and a tower housing the commander and elite guard?

2 or 3-level high main street in the living area, with a wooden walkways/galleries overhanging over the streets, high-class quarters on the highest z-level, statues and moss-gardens, and water running under the lower level?

I recommend the one im currently doing: taming the waterfall and making a dwarven Hoover Dam.

edit:Oh wait, you said new. I suppose a huge tower of sorts can be a good start..

Find a good embark with a 20+ level waterfall/cliff. Build a walkway from the top ending with a large burial pyramid hanging from the end.
Of course add the requisite self-destruct lever, and make your fortress entrance path under the pyramid.

Do ghosts come if you've destroyed their burial site? Get enough corpses and you might be able to create an entire army of ghosts in the event of terminal Fun.

My first was a water-tower.  Basically, I built a pump-stack and water wheel right by the river in order to pressurize water a few Z's above the river level, thus allowing my fort which was a few Z's up from the river to have water on all it's levels without needing to build a water reactor or anything of the sort.

It's become a fixture of my forts since then.  Bonus points, give it plenty of options like "unpressurized, pressurized at +n z, etc."

Build the inverted pyramid, but have it supported by a single... support, and leave it hollow. Fill it with magma, link the support to a lever, and pull the lever. Bonus points for building it over your fortress. Even more bonus points for building your fortress inside the magma.
