So if I have a king, then will my fortress stand?

So If I get a king and then decide to abandon(?) the fort, will that place become a mountainhome and will I( be able to go back as an adventurer and visit it and talk to the people?

No. Abandoning is abandoning. If you feel like visiting a living fortress get dfhack nad use dfmode.
