An easier way would be to build a retractable bridge.

There's a delay for bridges/floodgates right? I've noticed hatches are instant, this makes me rethink many trap designs...

They can break bridges too, if they're down. Furthermore, large creatures on a bridge prevent it from retracting.

Only from above. Different z-levels and all.

A note: Unless I am mistaken, floor hatches do not support each other. Therefore, you must either have a two- or one-tile wide corridor, or must arrange for strategically placed chunks of normal floor, or must content yourself with a two-tile-long Falling Field.
