We can already sort of do this.

Side view:

# = Wall
M = Magma
W = Water (2 deep)
G = Goblin
\ = Ramp
/ = Ramp

When there's no goblins or you want dwarves to go out, drain the magma, otherwise, pump magma in, it heats the water and melts anything walking through the water.

That doesn't actually work anymore - Toady changed magma quite a while ago to heat adjacent tiles to 10075 (instead of 10100 as it was in 40d and early 0.31.xx), which means it's no longer hot enough to melt fat.

Hm, a trap that flows water over a heated metal plate would be really neat. Instant steam! Crispy fried elves, anyone?
