If I only have a single "Body size" entry, will this mean the creature starts out as an adult and can still do labors as per usual?

Body size has nothing to do with labours. That's down to CHILD. If you omit CHILD, the creature won't breed at all, and the minimum value for CHILD is 1, so you'll always have to wait at least one year for the creature to become an adult.

Otherwise, yes, it'll work.

If I omit CHILD will it both not have children and be born an adult? That would be ideal but I'll take what I can get.

EDIT: This is a civ creature I'm talking about, so it won't be found in the wild if it matters.

What labors?  If it's a civilization creature, then it can perform jobs as soon as it hits the age declared by [CHILD].  If it's a domestic animal, it can be trained after this point.
