How do you get your companions to swim when you do?

I don't think they will

and I'm pretty sure most people you recruit can't swim at all so if they were to say... dodge into a river

Pretty sure they would drown

Yep, all of my companions who have dodged into a body of water didn't live for much long.

we should have a feature that allows us to carry people so we could save drowning comrades  or throw enemies to the river better yet chop off limbs of enemies, carry them, put them in bags and sell them for gold as collectibles LOLZ

If you use DfFusion to swap control to an ally for a while, you can train swimming for them.  Two levels is enough to let them recover from being knocked into water, and they'll climb out on their own (I think).  I'm not sure if they'll follow you across otherwise impassable bodies of water.
