You could always build your city over and around a magma pool, that's what I usually do.  The caravans will go all the way down to where ever the depot is.

Either A) Take your city to the magma, B) Play the Dwarven Fusion Reactor game and set up a few perpetual motion waterwheels to power the assembly, or C) Play it slow and easy, manually operated pumps feeding magma into airtight chambers.  Remember that the rear end of a pump (the direction it pushes fluids) is waterproof, so if you surround the output with walls, it makes a secure chamber that the liquid won't leak out.  That way, it's easy to eventually get the magma all the way to the surface with one screw operator and a lot of patience.

I've always wanted to try a magma piston myself, though I'm afraid that I'll shit myself as soon as I do.  It's the method of dropping a heavy block into the magma sea, and letting it splash all the way up to the surface.  Anyone know how high a magma piston will fire?

Not into the Magma Sea, no. The Magma Sea is floored with SMR (Semi-Molten Rock) which instantly dissolves anything that falls into it. Pump the Magma out of the sea into a large storage tank (floored with normal stone) right next to the Sea, then drop the Magma Piston into that.

It can squoosh Magma up to any height... hundreds of z-levels, if needed. When the Piston drops, the Magma teleports up onto its top surface, regardless of how many z-levels up that is.

If you can find a spot where the rock goes all the way down to the SMR, then you can dig it out and drop the piston onto the very lowest level.  A single floor on top of the SMR will stop cave-ins from disappearing.  If you channel out that floor, suddenly 100z of rock can fall into it and vanish....

Just rock, or can you lose a river in there too?

You could lose brook tiles and that but there's no way to actually drop the start point of the river. As such you would just have water forever falling through the whole map until it touched magma and became obsidian or touched the SMR and that bit of water vanished. Not really getting rid of the river so much as you've got a river and a waterfall forever eating away at your FPS.

If you floodgate the entrance of a river, can't you reduce it to 5 tiles of flowing water, and leave the rest of the river dry?

Yep. This is why dams are exactly half as Fun as they should be...

If you pour magma on the entrance to a river, you get rid of it completely.  Forever.

If you built your magma pump stack to be powered by waterwheels on the river, this can be a foolish mistake.
