Catching Large Animals

I saw some snailmen running about on the surface and thought what fun it would be to catch them and subsequently train them or failing that, butcher them and use their hides to make bags to hold vast quantities of sand. However, I must admit I'm at a loss for how to actually capture them. Animal traps only work on vermin and my cage traps are busy protecting the hallways within my fortress. Is there anything I can do to bait them into the traps or something?

Edit: D'oh, never mind, apparently they're just barely intelligent enough that my incomprehensibly moral dwarves refuse to butcher them. Nevertheless, the question in general stands: is there a reliable way of capturing large land animals on the surface, perhaps by baiting them into traps?

Build a giant cross-shaped section of walls, with the center replaced with some cage traps. Animals will be more likely to path through it than around it.
