Have a control room with three levers: one to fill the moat with magma, one to fill it with lava, and one to drain it. Then reconfigure it at your own convenience.

If you're really shooting for MEGA, then you need to have an underground magma "sleeve" around your water moat.  Build a blockhouse on the back side of your fort that keeps the magma flowing 24/7 so that you get convective warming.  That will keep your water moat liquid year-round.

Imagine a troop of fur-wearing goblins preparing a winter assault, approaching through the tall frost-laden grasses and trying not to shiver... they gaze up at the giant pyramid and the archer towers straddling the bridge.  The thick steam clouds hovering over the hot moat obscure the approach and hint at the opulence and wealth of this fortress; the glistening purple stone (srsly, purple?) towers must bristle with archers.  One suggests swimming the moat, but then they notice the thin exposed trench of lava burbling and swirling just outside the deep water moat.

The goblins, assured of their death if they return without the spoils of war, decide to take a chance.
