on the overall status menu in the spot where it says peasant is the letter "s". it goes from the top miners, carpenters, masons, trappers, metalsmiths, jewelers, craftdwarves, nobles, and the "s", children, fisherdwarves, farmers, then mechanics with the trained and other animals after that.
