is dimple dye edible?

It doesn't seem like dye would be very appetizing, but I notice that one of my new dwarves prefers to consume it.

This was closed for 120.23a -- and these are dwarves created in that version?

That's not what Today meant; he mwant, did any new dwarves GENERATED by the new version have this preference; assuming you have an old save file, it'll still have the old dwarves with the bugged prefs in it.

Milled products by default aren't supposed to be edible, and dye isn't cookable, so to directly answer the question, no.

But as for preferences, regenerating the world should stop it as noted.
