How do you find castles? I have yet to see one.

On the main map (not overworld), they usually look like this:

╚∞╝

Not hard to miss. The ∞/8 is the front door.

Are what the map calls fortresses any different from castles, or at those just two names for the same thing?

I think fortresses have square builds dominating the walls, and castles have round builds dominating the walls. I'm not certain though.
