I dunno, I have tons of booze in my stockpile but they're all running out to the brook to drink.  I'm considering atomsmashing them for their dangerous and undwarven behaviour.

How much is 'tons'?  Only one dwarf can drink from a barrel at a time, and each barrel can hold multiple units of drink, so if you only have like a hundred or so there might simple not be enough barrels for them all to drink at the same time.  Brew more booze, that should fix the problem.

Yeah, that might have been the problem.  There was a row of like 10 barrels flashing with 10 dwarves.

It's not only that they have favorites, but that drinking only one kind of alcohol for a long time makes them unhappy.

 No matter what their favorites may be, somehow they always manage to hit the Dwarven ale and Dwarven rum the hardest.  I'm always asking myself why the rum always is gone, and then I look at the Sweet Pods and see their one harvest per season maximum and realize, that's why the rum is gone.  No idea why the ale goes so fast, though; pig tails get plenty of harvests per season.

Not that it matters much. There's lots of other ways to keep dwarves happy.

Variety in booze keeps away unhappy thoughts, it also keeps dwarves drinking! For example, if Urist McThirsty drinks nothing but dwarven ale, he'll get unhappy and will stop drinking ale. This might clarify:

Urist McManager: Becase we only have pig tails.
Urist McThirsty: By my beard, Armok and all that's dwarvenly, until I find some booze other than ale, I shall drink nought but water, even if that means slowing this fortress to a grinding halt and causing the death of everyone in it!
