Assign him to not use weapons. Wrestling = unarmed combat.

Also, military gets training as a wrestler irrespective of their actual weapon
albeit at a slower pace
all of my legendary military dwarves are also @ least level 6 wrestlers, just from training and demonstrations, I guess
