Here's a video I've made showing how to irrigate soil where one can't find mud and make a farm.

Breach a pool, let it flood. Not elegant but simple.  :P

Since this thread is up at the moment its worth pointing out that the current 2010 build of DF has a bug that invalidates a method on the front page of the thread. 

Digging out a room of dirt doesnt work for underground crops without muddying the ground like rock requires.  This seems to be a known bug.  This leave you with draining of muddy pools (controlled flood) or bucket chains.
