If a dwarf tantrums and it isn't someone who is phenomenally strong, military/guard dwarfs may attempt to simply knock or wrestle the tantruming dwarf unconscious.

Example: Urist McBadWeek has pretty much had it. He starts punching in several directions before Urist McAxelord comes in for his bi-hourly drinking binge and rather than slicing him to bits with the axe blade, he bops him on the head with the axe handle and repeats as necessary. (Urist McAxelord has become a Dwarf Therapist hyuk hyuk hyuk) When Urist McBadWeek wakes up, he may have calmed down and proceeds to go about his business.

Yes, please. Even if it results in a few bruises and, depending on the tantruming dwarf's strength and toughness, a broken bone or something, I'd much rather have that happen instead of seeing my legendary something being brutally murdered by the oppressive purple regime law enforcement because some masterworks of his fell into the trash compactor.

That's why I'd like to see more non-lethal weapons.  For example, truncheons made out of wood used to subdue a dwarf without killing him.  You could equip your guards with them to keep the peace without accidentally recreating a Stalinist purge in the process.

That or a military order that orders dwarves to use subdual force rather than go all out on them.

The pommel of a sword, mace or axe can be used to subdue people as well. You can probably even subdue someone with the heavy end of a mace if it doesn't menace with spikes and you're not actively trying to kill him. You will break something though and don't think about using an axe unless you've got a surgeon ready.

The dev blog mentions including methods to disarm, hold/immobilize, or knock someone out non-fatally for the sake of interrogations. Once we have those, it probably won't be too hard to have them be how units act toward deviant members of their own society.
