I know that building destroyers, particularly HFS, will path straight through closed doors and floodgates to reach your dwarves. 
I also know that they cannot destroy a closed hatch from below. 

Question is, will they path to it?
If they do, they should cluster just below the hatch. 
Then it's target practice time.  Just have deal with the ones that can go through fortifications first. 


A slightly different trap I thought of involved (ab)using one-way paths to have the demons in an area I could send troops/prisoners to, but unable to path to the fort.

Hmm, that's a particularly dwarfy way of doing it.  Remember that a lot of them have ranged attacks, so ballista may be more prudent than marksdwarves.  Of course, I imagine you could fashion an execution chamber if this worked as well.
