Assuming you haven't changed the default keyindings:

Press "z"
Go to "Stone"
Disable stone that you don't want used, enable stone that you do want used.  All things that can be made from stone will be made from stone that you approve of, provided that stone is available on the map.

While adding magma to anything will make it dwarfy, adding the word "magma" to your post does not necessarily make it funny.

I used mica as an example from the top of my head (as its one of the few stones i remember) although i did not know that non-bauxite are magma-proof  :o

And i know how to forbid, thank you

The first thing i always do is forbidding Plump Helmets from beign cooked (unless its no longer needed in 31?)

Whenever I want items made out of a certain stone, I build a mason's workshop in the middle of where that stone was mined and assign the jobs there. Then I deconstruct it when I'm done. This doesn't always work well because dwarfs will pick up a stone where they are and carry it to the workshop, and then flake off and do something else if it's too inconvenient for them to stay there.

I don't like using burrows either because you get a lot of cancellation spam and nothing accomplished when a dwarf decides that he absolutely must work outside of the burrow but he's not allowed to.

Forbidding stone works well but be aware that if you mass-forbid all your basalt for example and you have workshops made of basalt, dwarfs will stop using those workshops.

Plump helmets are cook-allowed by default in 0.31.x.

i used to forbid stone and mess with stockpiles, but just recently I remembered the stones menu.  Now that I have ample quantities of obsidian, I just turn off every single stone in the stones menu (obsidian doesn't show up there for some reason).

I usually put stone stockpiles (only allowing a certain kind of stone) around a mason's workshop, and then assigning a Blocks before the thing I want to be made of the stone. It usually works.

There are two ways to use only bauxite without having to forbid other stones which both involve making sure that bauxite is the nearest stone available to the workshop. The first is to lock your crafter in a room with only bauxite and his craft workshop, which has the disadvantage of risking the crafter dieing if you don't keep an eye on him. The other is to dig a long tunnel ending in a room a fair distance away from your fort, then designate a bauxite stockpile in the room between your fort with the craft workshop at the farthest point from your fort in the same room. Clear the room of all other stone, and the nearest stone the craftsdwarf will be able to reach will be the bauxite you stockpiled there. The best part about this is that once space appears in the bauxite stockpile, dwarves with stonehauling enabled will automatically haul more there to fill it up if it's available. The disadvantage of this method is slightly longer hauling distance.

There's no need to go to extremes to lock people inside rooms. With burrows and quantum stockpiles its prretty easy to force a particular kind of material.

I dug out a special large room for my Masons because I want them to build a lot of things out of obsidian. Make sure to add in a few dormitory beds, and a dining room. Overlaps are ok. Put In a pair of 2x2 custom stockpiles, one for prepared (or not, if you don't cook) food, one for drink only. Then put in some workshops of the right kind and assign the builders to the burrow.

The other dwarves should restock the food/drink periodically, and haulers can come take away anything the burrow dwellers make. If you turn off everything but the job you want them to do, They won't ever need or want to leave, so you don't get cancel spam.You could even increase luxuries to make em happy if it's a concern.

When you want a particular kind of material, just make a 1 square stockpile and put a garbage dump over it, and dump as much of the material as you see fit, reclaiming it once it's been delivered. BAM, you have a 1 square stockpile the masons are forced to use filled with what you need.

You can do this with multiple workshops too, just turning the garbage dumps off/on depending on where you want materiel delivered. Works like a charm in my .14 game.
