If you limit yourself to a much smaller labor pool though, you'll still have to be making tradeoff decisions well into the middle of the game. It also makes each loss of a dwarf something to be feared, since they'll be wearing a lot of hats.
Toady fixed that equipment bug ;-)

I usually have about 80-100 dwarves in a fortress, because I want all the features but I'm not on the best of computers.
I'm really, really slow starting up my economies. For example, despite my current fortress being in year three, having 60+ dwarves, several smithies, adamantine and magma, I only have a magma smelter up.

in order to get all industries working properly i need around 50 dwarves (dedicated haulers, specialists, etc.)  i like a nice large military of 40-50 dwarves and a few extras thrown in for projects and such.  so for me, a fortress of 80-120 is perfect.

This is true, I only have one dwarf skilled in brewing, farming, armouring at all, currently. If any of these cop it, I have a problem. I have trained them all up to be pretty competent fighters and dodgers though.

Yeah, this is me also. I generally set my cap at around 100. It seems to also naturally give me a decent FPS rate, with a significant bog-down if I go too far above those numbers.

I like just under 50 for the most part.
Like many of us, by the time the fort gets anywhere close to 'done', I start a new one with new and improved design though. So I haven't gotten to a point where more dwarves would benefit me in any way.

My latest design has the production area with all the valuable skilled dwarves safely hidden away behind several layers of defenses.
I was thinking of having the primary line of defense just be migrants with good equipment - makes them somewhat useful, and none of my valuable dwarves will ever get into contact with them, so they won't tantrum when they get horribly murdered.
And a new migrant can just take up the old one's equipment...

I like about 2 dozen, but I play on a crappy old laptop and I've also never gotten one of those really big sieges I keep hearing about.  I usually abandon my fortresses due to some mistake, or just getting bored with what I have and wanting to try some new project.

I'd like to try a generational game but I'm scared of no immigrants.  I'd like it if I only got 1-2 immigrants a year regardless of wealth.. so maybe I decide that yeah, I really do need another soapmaker this year, but can kill them off if I'm happy with the state of the game where it's at.
