I'm just getting into this game, so far it's awesome... this is exactly what I was hoping dungeon keeper would be like.

My first settlement was wiped out with the second seige... so I'm trying to play a bit more defensively for my second fort. To that effect, I'm trying to build a 2 Z-level deep dry moat with a drawbridge in my fort's main entrance, but I've run into a snag.

I've already dug out my tunnel entrance, built my bridge (which I stupidly built wrong, but I can rebuild it quick if I need to), set up a lever for the bridge, and I started to try to dig out my dry moat... and I can't channel the cave floor... Is there any way to do this now that I've already built my entrance? or is this entrance boned? Will I just need to wall it off and start again with a new entrance?

TL;DR: How do I dig a pit starting from a cavern floor?

You can't channel where a bridge is.  Get rid of the bridge, channel where you want with a temporary floor to get across, get rid of the ramps beneath, put the bridge back, get rid of the floor.

If I'm reading your problem correctly, that is.

Thanks for the quick reply!

That sounds like a likely solution. I'm trying it out now...

edit: Yeah, that was my problem. I built the bridge before the pit, and hence couldn't channel. Thanks again.
