Most of what I use has already been mentioned.
I also use UltraISO for all my disk ripping needs.
Power Tab Editor because I play guitar.
It also shows you the notes for quick conversion to other instruments.
Also, I use Audacity for sound recording.
I have ProTools, but it requires me to be hooked up to actual equipment, which is optional in Audacity.

For windows, WinDirStat. Gives you a visual of how your disk space is distributed bwtween folders and individual files in a logical way. I recommend this to anyone who is running low on space, or who just doesn't know where their disk-space has disappeared to. There's at least one linux alternative, Disk Usage Analyzer, but it isn't as pretty IMO.

This is the single coolest thing I have learned from this thread. Thank you for sharing, sir.

 Anybody know any utilities that expands the utility of the clipboard? I would very much like the ability to hold a line of text and an image at the same time.

Kinda missing the point, but the fact that you mention it implies you're enough of a command-line dork to use many of them competently. I applaud you!
