Taking away dwarves' need to eat/drink/sleep?

I've played to the point of very large forts before, and I want to try something different.  Basically I just want to sort of play with the physics - build elaborate pressurized water trap systems, that kind of thing.  But I don't want to care about their food / booze / bedding situation.  I just want to build.

I know there's a way to do this with raw twiddling, but can anyone tell me exactly how?

Add [NO_EAT][NO_DRINK] and [NO_SLEEP] to the dwarf entry. It would be very wise, however, to remove their [ALCOHOL_DEPENDENT] tag, as dwarves that don't drink don't get their booze, leading to zero productivity.
