Issues with auto-butchery.

So. Disabling auto-collect webs seems to have disabled automatic butchering, tanning, and fat rendering despite them being enabled in the menu.
How do I fix this?

Find a way to keep your dwarves away from webs and re-enable auto-collect?

...Or perhaps just queue the jobs yourself. I guess.

I've tried turning it off and on again. It still fails to work.

Also, collecting webs itself is horribly broken. Someone tries to do it, then gets locked in place, unable to find a path.

Known bug, those three auto-workshop options got tied together accidentally. Search the mantis bugpage for it.

An easy work around is to simply suspend the collect web job in the workshop(s). As long as it remains listed, the auto feature won't create a new one.
