Hi, in this new version of dwarf fortress
I dunno how to avoid my dwarves going outside while in a siege for example...

In last version, i just hit "o", and, put than to don't go outside

In this new version, how can this be done?

I think the best way to do it is via civilian alerts in the military screen corresponding with a burrow. But I haven't reached that point in any of my forts yet.

First create a burrow (accessed from the main screen via w).  Designate the area where you want your civilians to go.  See http://df.magmawiki.com/index.php/Burrow for instructions.

On the military screen, go to the alerts page.  (m, a)  Create a new alert -- I call mine "danger".  Set the alert to send civilians to that burrow when active.  Then activate it as the active civilian alert.  Don't forget to turn it off when the danger has passed.  See http://df.magmawiki.com/index.php/Alert for instructions.

Neither wiki page is very good at step by step explanation, unfortunately.  The three panes in the military page take a bit of getting used to.  You have to ensure that the right thing is selected in all three panes in order for the alert order to take properly.  Someone with time should update it...
